Lead the daily high-volume pastry and bakery production of a central kitchen supplying multiple outlets (restaurants cafés hotels retail catering). Deliver consistent quality at scale on schedule within cost and full compliance with UAE / Dubai Municipality food safety standards.
Key Responsibilities
Production & planning
Plan and execute daily/weekly production schedules based on outlet orders and forecasts.
Produce the full pastry range at volume: viennoiserie laminated dough entremets cakes desserts breads plated components frozen/chilled semi-finished products.
Scale recipes accurately for batch production; maintain standardized recipes gram-weight specs and yields.
Solid understanding of cost control yields and cold-chain / distribution logistics.
Able to work in a fast-paced high-output temperature-controlled environment; physically fit; flexible on early/shift hours.
UAE experience preferred.
